Sweet wild boar


With all the boar that are running wild in the forests on the outskirts of Pisa, they are without doubt hunted, in order to make dishes such as this one. In the markets, the wild boars are plentiful. Sergio Lorenzi brings you this recipe.

Ingredients for 4 people

600g of wild boar thighs
1 bottle of old Chianti wine
100g of raisins and pine nuts
1 table spoon of cocoa powder
A few bay leaves
Thyme
Rosemary
Fennel and
50g of Olive Oil
Salt
Pepper

Put the boar into a pan and lightly fry it in small pieces. Afterwards, put it in a dish with the wine, leaving it for 24 hours. If you fry the pieces in oil and herbs, this will add to the infusion. Therefore, when you cook it further, it is important to add more herbs, and salt. Half bake the pine nuts, raisins and cocoa, and cook them together until you have made a good thick sauce. Serve them together.
