Mushrooms Soup from Cisa


Now, if we pass by Cisa, go will go there using a motorway, which has transformed the route for the tourists and gastronomists. The restaurant “La Borella” has refined its clients and its kitchen, in order to keep within the authenticity and traditions of the countryside.
For this soup, we need to wash the mushrooms well and cook them slowly in a pan for 20 minutes with a little oil. Add parsley, garlic and a little thyme, and cook for a further quarter of an hour. At the point, mix some tomato with basil leaves and bay leaves. Put them on a low heat for 20 minutes.
In the liquid that has been formed, boil some potatoes that have been cut into slices and then carry on cooking them. After a few hours has passed, serve it with a few slices of bread and make sure that it is served very hot.
