Fried Mullet

Ingredients for four people

800g of Mullet
Olive Oil
White Flour

Red mullet weighs about 30-40 grams each. Wash them, make sure their gills are clean with the index finger of your right hand. Dry and coat them in flour. Place them in the frying pan for 2-3 minutes, ensuring that they don’t fall apart. The secret of this recipe is to use good clean oil and the finest fish. In restaurants, this dish is not so good because they tend to use the big fryers with regular oil.
