Vellutata di CarciofiSergio Lorenzi liked soup, and this one is particularly tasty and it isn’t even difficult to prepare. In order to encourage you to notice the amounts of everything they use, we have asked a local chef. He is considered a teacher of food and is known for always being in the driving seat when it comes to cooking.

Ingredients for 6 people

8 artichokes
100g of butter
50g of white flour
1 litre of meat stock
Half an onion, chopped
Salt
Crostini with bread, put into the oven with butter

Go to the heat. Cook the onion with a third of the butter, adding chopped artichokes and leave it to cook for a few minutes. Add the flour and mix it well, still keeping the pan on the heat. Add little by little the meat stock and continue to stir the mixture. Cook for a further 20 minutes. Afterwards, pass all the ingredients through a sieve. If necessary, add salt. The soup is now taking shape. During this, make sure you stir up the rest of the butter in a pan. Stiring is the key to this recipe. If you wish to enrich this soup, you can add egg and cream, however, that may make the soup appear lumpy. Serve the crostini seperately. And remember to put them all in the oven before serving them at the table with a knob of butter.

Vellutata di carciofiSergio Lorenzi ama le zuppe primaverili e questa è particularmente gustosa. E non è nemmeno difficile da preparare. Per incoraggiarvi a realizzarla vi sottopone anche le quantità, cosa che fanno pochissimi chef. Quasi tutti, infatti, vanno ad occhio. Non cosi il nostro Lorenzi, abituato a stare in cattedra, da autentico docente della gastronomia come lui si considera.

Ingredienti per 6 persone

8 carciofi ben puliti
100g di burro
50g di farina bianca
1 litro abbondante di brodo di carne
Mezza cipolla bianca tritata
Sale quanto basta
Crostini di pane passati al forno con burro per guarnizione

Accendere i fornelli. Rosolare la cipolla con due terzi del burro, unite i carciofi tagliati a fettine e fate cuocere per qualche minuto. Unire la farina e amalgamare bene tenendo il recipiente sul fuoco. Aggiungere piano piano il brodo di carne e continuare a mescolare. Far cuocere 20 minuti circa. Quindi passare il tutto al setaccio o, se preferite, al passatutto con disco fine. Se è necessario aggiungete del sale e fatela ribollire. La zuppa sta prendendo corpo. Durante questa operazione unite il resto del burro crudo mescolando bene. Mescolare è un verbo che ricorre molto nella ricetta. Se volete arricchire la “vellutata” unite 2 tuorli d’uovo diluiti con panna. Ma non fate ribollire di nuovo, altrimenti si formeranno dei grumi. Servire i crostini a parte. E rammentatevi di passarli prima al forno mettendoli in tavola con una sleppa di burro.
