Tagliata di vitella alla Cane e Gatto


The name of this restaurant is intriguing, due to the fact that Sonia and Paolo Senni, have revamped, with creativity their “Antica Hostaria”, with old recipes from Siena.

Ingredients for 4 people

500g of veal
100g of cooked ham
200g of fresh porcini mushrooms
meat stock
a glass of brandy
a glass of chianti white wine
Olive oil
Garlic
Sage
Black pepper and salt

First of all, slice the veal into strips of 1cm thickness. Get a frying pan with oil, sage and garlic, and season with salt and pepper. When everything is nicely browned, bathe it with the wine, and leave it until the wine has evaporated, and cook on a slow heat until the sauce can be removed. All is well? Now its time to add pieces of ham, the porcini mushrooms (which have been washed and sliced finely), leave them to bathe in the brandy on a low heat, add little by little the meat stock. When you have created a thick sauce, you may stop cooking it. Serve it with white Chianti wine and homemade , slightly salted, tuscan bread.

Tagliata di vitella alla Cane e Gatto


I titolari di questo ristorante dal nome intrigante, Sonia e Paolo Senni, hanno rielaborato, con fantasia creativa, nella loro “Antica Hostaria”, vecchie ricette senesi. Sentiamo com’è la tagliata di vitella proposta.

Ingredienti per 4 persone

500g di fesa di vitella
100 di prosciutto cotto
200 di funghi porcini freschi
brodo di carne
un bicchierino di brandy
un bicchiere di Chianti classico
olio extra vergine di oliva
aglio
salvia
pepe nero e sale

Prima di tutto affettate la vitella a striscioline di circa un centimetro di spessore e avrete la tagliata. Fatela insaporire in padella con olio, salvia e aglio, aggiustando con pepe e sale. Quando è ben rosolata, bagnate con il vino, lasciate evaporare e cuocetela a fuoco lento finché il sugo non si è ritirato. Tutto bene? Ora aggiungete il prosciutto a striscioline anche lui, i funghi porcini (che in precedenza avrete pulito e trifolato), bagnate il tutto con il brandy e lasciate insaporire a fuoco basso, allungando poco a poco con brodo di carne. La giusta cottura si ottiene quando il sugo si sarà addensato leggermente. Servire la tagliata con Chianti classico e pane casereccio tipico toscano, senza sale.
