Pennette alla Boscaiola


This dish takes an hour to prepare. Get a frying pan. Add celery, carrot, onion, mushroom and tomatos to it. Add oil. Keep it on a low heat and cook it slowly. At the last moment, add some cream. All the restaurants and traditional eating places use cream to bind the ingredients together and to hide any impurities. The rest is straight forward. The pennette (pasta) are then added to the frying pan.

We could say that this is a small recipe that can easily be made at home. There are other recipes which are interesting to read. They make you want to eat them straight away. And they encourage people to go into restaurants you find throughout Tuscany to try them.

Pennette alla boscaiola


Per preparare il fondo ci vuole un’ora. Padella. Sedano, carota, cipolla, funghi porcini trifolati, pomodoro pelato. E olio. Fuoco basso. Rosolare piano piano. In ultimo aggiungere un po’ di panna. D’accordo, ormai la panna è “out”, negli anni passati c’è stata un’inflazione, tutti i ristoranti, tutte le trattorie, tutte le gargotte andavano avanti a panna per legere gli ingredienti più scombinati e per nascondere i cattivi sapori, ma usarla con misura (e non per ingannare) qualche volta è utile. Il resto è elementare. Le pennette, quasi cotte a parte, si saltano in padella con il fondo descritto. Diciamolo, è una ricetta, una delle poche, che si può realizzare anche in casa nostra dove cuciniamo sempre frettolosamente. Le altre sono interessanti da leggere. Fanno venire appetito. E spingono ad andare nel ristorante che le ha suggerite.
