Minestra piscialletto


Called “piscialletto” from Montepulciano, the yellow flower of tarassaco, a duretic herb which is found in the long streets of the countryside.

Ingredients for 4 people

250g of piscialletto leaves
2 cloves of garlic
1 leek
1 stick of celery
Olives
Salt and pepper

Get a frying pan. Chop up the leek, celery and garlic. Place it on the heat and then add the piscialletto leafs. Cook for 6 minutes, in boiling water and with salt and pepper. Cook for a further 30 minutes and then place it all in the blender.

Si chiama “piscialletto”, dalle parti di Montepulciano, il fiore giallo del tarassaco, un’erba diuretica che si trova lungo le strade di campagna.

Ingredienti per 4 persone

250g di foglie di piscialletto
2 spicchi d’aglio schiacciati
1 porro
1 rametto di sedano
Olio
Sale e pepe

Padella. Porro tritato, sedano idem e aglio. Fuoco. Aggiungere le foglie di piscialletto, 6 minuti di cottura, unire acqua o brodo, sale e pepe. Cuocere per un’altra mezz’ora. Passate tutto al frullatore.
